Here is how you make LaRaine's Chicken Enchiladas:

cook chicken breast with onion and garlic drain and save onion and garlic chopped chicken up fine or shred in a large bowl add chicken garlic and onion mix in one can of enchilada sauce and the cheese mix well then use a 1/4 cup measure and place 1/4 cup of the mix to each tortilla roll and place in baking dish you may want to place tortilla in water to soften before rolling to prevent breaking after you have roll all your tortillas in a blender add the 2 cans of rotel and remaining can of enchilada sauce and blend well pour over you enchiladas covering well back 350* for 20 or until cheese is well melted. you can cover with added cheese and brown but this is not add to recipe.Serving Size: Makes 21 EnchiladasNumber of Servings: 21Recipe submitted by SparkPeople user LARAINE.
