The ingredients for Sheary's Chicken Fiesta are:

3 boneless, skinless chicken breasts
1 c salsa
1 t cumin powder
1/2 packet taco seasoning
salt to taste (optional)
2 cups cubed zucchini
2 c fresh spinach
1 c shredded carrots
1 can black beans, rinsed and drained
1 c frozen corn
16 corn tortillas
3/4 c grated monterey jack cheese
2 c shredded romaine lettuce
extra salsa
sour cream (optional)

Here is how you make Sheary's Chicken Fiesta:

Place chicken (I had 3 frozen boneless, skinless chicken breasts, 1 cup salsa, 1 t cumin and 1/2 packet taco seasoning in crock pot. Cook on low 7 hours. Chop zucchini and carrots and add to chicken mixture. Drain and add black beans and corn. Rough cut spinach and add. Turn crockpot to high and cook 1 hour. Spray tortillas with canola oil spray and toast in oven. Place 1 tortilla on plate, top with 1/2 c chicken mixture, 1 T shredded monterey jack cheese and repeat. Top with shredded lettuce and some salsa.
