Here is how you make Light Chicken Marsala with Linguini:

1. Slice chicken breasts lengthwise to make thinner pieces and allow for faster cooking time.2. Sprinkle chicken breasts with salt and pepper and Pan fry chicken breasts in EVOO until chicken is not pink inside and internal temp is 160 degrees.3. Remove chicken from pan and set aside.4. Add mushrooms to pan, saute for a few minutes to soften mushrooms.5. Add marsala wine to mushrooms and simmer on medium high heat to reduce and cook off alcohol.6.
