2 t. tarragon (I'm a tarragon fiend - you can use less!)
1 can 98% fat free mushroom soup
1 small can mushrooms
1 can spinach
1 c. brown rice

Here is how you make Tarragon Mushroom Chicken:

In saucepan, boil water and add brown rice - simmer covered for 30-50 minutes depending on brand.In skillet, saute onion with olive oil. Add chicken (I cut mine into chunks, but you could do whole breasts, too) and brown. Add tarragon, mushroom soup and 1/2 c. water. Cover and simmer for 30 minutes. Stir occasionally.5 minutes prior to its completion, toss in the can of mushrooms and spinach to warm.Serve chicken over rice. Voila!
