2 large or 3 small chicken breasts (just under 1 lb. total weight)

In a bowl or ziplock bag (I recommend the bag), mix together the panko, parmesan, and ranch dressing mix.In a bowl, beat the egg and pepper together.Dredge each chicken breast in the egg mixture, and then in the panko mixture, pressing the panko into the chicken breast. Place the chicken breasts in a baking dish. If desired, sprinkle the leftover panko crumbs on top.Bake at 350F for 35-45 minutes, until chicken breasts are done and juices run clear.
