3/4 pound(s) uncooked boneless, skinless chick breast
1/2 tsp salt
1/4 tsp pepper
1 med onion, sliced
3 cloves, medium, minced
14 oz canned artichoke hearts, without oil, drained, patted dry & quartered
12 oz roasted red peppers, cut in strips

1/3 c white wine
1 c reduced-sodium chicken broth
6 cups cooked penne (can use other pastas)
1/4 c grated Parmesan cheese, Romano variety
1/4 c parsley, fresh, chopped

Here is how you make Penne with chicken, artichoke and peppers:

heat 1 tbsp oil in large skillet, add chicken and season with salt & pepper (1/2 of each). cook & until lightly browned. Transfer to plate and set aside.Heat remaining oil in same skillet. Add onion & garlic, stir occassionally. Cook until begins to soften (~2 minutes). Stir in artichoke hearts & roasted peppers. Cook for 1 minute, stirring occassionally. Add wine and cook until liquid reduced by half (~1 minute). Stir in broth and bring to simmer.Add pasta to skillet and cook, tossing occasionally, until heated through and liquid thickens slightly (~2 minutes). Add chicken and remaining salt & pepper.
