Here is how you make Almond Rice Chicken:

Cut chicken into strips, then in halves. Season with salt and pepper, set aside. In a sauce pan, heat 2 T oil. Add onion and parsley and cook 3 min. Stir in rice, salt and broth. Bring to a boil. Cover and simmer 15 min. Meanwhile, heat 2 T oil in skillet. Saute chicken for 3 min on each side. Add rice mixture and cook 5 more min.
