2 Large Chicken Breast (no skin or bone) - Cut in Half
1 Cup Uncooked Brown Rice
3 Cups Frozen Broccoli
1 Cup Frozen Carrots
1 Chicken Boullion Cube (2 Tb Powder)
Onion Powder - To taste
Garlic Powder - To taste
Black Pepper - to taste
Soy Sauce

Here is how you make Chicken and Rice Bake w/ Vegetables:

Mix together all ingredients, except for the chicken. Place in sprayed shallow baking dish. Arrange Chicken breast on top. Cover with foil and bake for 90 minutes at 400 Degrees. Remove the foil and continue baking for 30 minutes. You will have to play with the time for cooking. I gave up after 2 hours when the chicken was done and the rice wasn't and ended up putting it on the stove for 20 min to finish off the rice. If you don't want to mess with the oven at all, put it all in a large saute pan on the stove and it will be done in 35 min or so!
