4 chicken pieces, trimmed ( I used thighs for the calculations)
1/4 c lime juice
1 cup uncooked rice
1 c chicken stock
red pepper flakes to taste


How Do I Make Coconut Lime Chicken and Rice Bake?

Here is how you make Coconut Lime Chicken and Rice Bake:

Preheat oven to 400. Mix coconut milk, lime juice, chicken stock and red pepper flakes in a bowl and set aside. This lets the red pepper flakes begin to rehydrate and allows you to taste the broth before cooking so you can adjust the level of spice. Pour rice into 8x8" baking dish and arrange chicken pieces on top. Pour liquid over top and jiggle the dish to make sure all air pockets are gone. Cover with foil.Bake at 400 until chicken is nearly done (aprox 40 min for bone-in thighs). Remove foil, turn on broiler and broil until golden brown.
