Slightly shred the chicken with a fork and add the rest of the chicken broth, evaporated milk, onion, and rice; continue to cook on high another 2 hours. Add the rest of the ingredients and finish cooking an additional 2 hours. This makes approximately six 1-1/3 cup servings.A yummy variation is to omit the rice and serve over mashed potatoes!You can reduce the cook time by about 1-1/2 hours depending on whether you start with frozen or thawed chicken and vegetables.
