The ingredients for Dan's Chicken and Rice are:

2 cups long grain white or thai jasmine rice
3 chicken breasts, trimmed & cubed
1 cup chicken broth
3 cups water
1 onion, coarsely chopped
1 tbsp. ground cumin
1 tbsp. salt
pepper to taste
1 cup vegetables of your choice (I use corn & peas - frozen or canned will work - if canned, drain thoroughly)
4 tbsp. Olive Oil (you will use half at the beginning and half mid-way through)


How Do I Make Dan's Chicken and Rice?

Here is how you make Dan's Chicken and Rice:

In a large pot (I use the same one that I use when making chili) heat 2 tbsp. olive oil on HIGH. When it begins to sizzle, put in cubed chicken breasts and onion. Cook chicken and onion until chicken is thoroughly browned on all sides, and it is no longer raw. After chicken & onions are cooked, remove from the pot and place in a bowl, and set aside. Remove pot from heat momentarily as you add in the remaining 2 tbsps of olive oil, and the rice. Return pot to heat and fry the rice until it is nicely toasted, but not burned. You may also add your cumin, salt, and pepper at this time. After the rice is toasted, add back in the cooked chicken and onions, any vegetables you choose to add (the nutrition facts for this recipe include 1/2 cup corn & 1/2 cup peas), the water, and chicken broth. Stir thoroughly to combine and heat until boiling. Cover and simmer on med-low for 15 minutes.
