Here is how you make Mom's Chicken and Rice Casserole:

Preheat oven to 350*F. Spray a 3 quart casserole dish with cooking spray and set aside. In a large bowl, combine the three cans of soup with milk. Add rice and mix well; stir in mushrooms. Pour mixture into prepared casserole dish. Trim any excess fat from chicken and arrange on top of rice. Salt & pepper chicken lightly. Bake at 350*F for 2 hours.
