I normally use monteray jack cheese, but couldn't find it on the ingredients list. It's good w/any cheese and my youngest doesn't like salsa, so at the end, I scrape it off then put the cheese on.

1 Med to Lrg jar of Pace Mild Picante sauce (salsa)
1 16 oz. pkg. of 2% shredded cheese of your choice
1/2 cup minute rice, brown


How Do I Make Monteray Jack Chicken?

Here is how you make Monteray Jack Chicken:

Place thawed chicken breasts in glass baking pan. Cover each chicken breast with approx. 2 Tbs or so of salsa. Cook in oven uncovered @ 375 till chicken is done. Usually 45 minutes or so depending on how thick the chicken is. Take out and sprinkle with 1/4 cup or so of cheese. Heat in oven about 5-10 more minutes till cheese is melted. While cheese is melting you can make your minute rice according to directions. I serve with steamed asparagus. I stole this recipe from someone somewhere, and we love it. If I'm having guests over for dinner, I'll make one 13X9 with hot salso for the adults, and one with mild salsa for the kids. Number of Servings: 1Recipe submitted by SparkPeople user KRISTYKAYWY.
