4 garlic cloves

1 green bell pepper, cut into quarters
2 serrano or jalapeno peppers (do not cut! just pull off stem)
1/2 bunch cilantro, chopped
1/2 cup water
salt to taste

5 oz oil (for softening tortillas)
16 oz shredded (or diced) cooked chicken breast
10 white corn tortillas (yellow will break too easily)
3 cups (12 oz) shredded Reduced Fat Monterey Jack cheese
minced onion (optional, not included in calorie count)
sour cream or creme fraiche (optional, not included in calorie count)

Here is how you make Perfect Chicken Enchilada with Salsa Verde:

In large saucepan, add tomatillos, bell pepper and hot peppers (reduce hot peppers to 1 if you do not like pepper heat). Cover with water, pinch of salt, cover and bring to a boil. remove from heat once tomatillos are tender (approx 10-12 minutes) and set aside until cooled. Place vegetables into blender with 1/2 cup water, add fresh garlic cloves and cilantro. Be careful: heat expands as you are blending. The blended mixture will thicken as it cools further.In skillet, heat oil. Once hot, carefully dip tortilla twice in and out of oil until softened. Stack softened tortillas on a plate. Once you have softened all 10 tortillas, place chicken in center of each tortilla, roll up and arrange in a baking dish, spaced approximately a finger width apart. Gently pour the salsa verde over enchiladas and sprinkle evenly with cheese. Place in preheated 350 degree oven until cheese has melted smoothly. Add optional onion and cream toppings. Serve with salad or rice and beans.
