3 chicken breasts, bone and skin removed
1/4 c whole wheat flour
1 c sliced red peppers
1 c sliced fresh mushrooms
1 c sliced carrots
1/2 c chopped onion
1/4 c dry sherry
1/2 tsp black pepper
4 cloves garlic, minced
1 tsp hot pepper sauce (more or less to your liking)
1/4 tsp salt
2 Tbsp olive oil
2 c canned evaporated milk
1 c water


How Do I Make Chicken A La Gigi?

Here is how you make Chicken A La Gigi:

Prepare all veggies and pre-steam to add tenderness if desired. Cut chicken breasts into bite size cubes and place into zippered bag along with whole wheat flour, salt, and pepper. Shake well to coat thoroughly. Heat oil in frying pan. Remove chicken cubes from flour and place into preheated oil reserving leftover flour mixture. brown well on all sides. Add partially cooked vegetables, minced garlic, sherry, and water. Stir well and often scraping bottom of pan until veggies reach desired tenderness. Add leftover flour mixture from bag and stir well, breaking up any lumps as necessary. Add evaporated milk and simmer stirring constantly until sauce thickens. Remove from heat. Add hot pepper sauce to taste. Serve over favorite rice, biscuits, or potato (not included in nutritional values). Serves 6.Number of Servings: 6Recipe submitted by SparkPeople user TALIA71.
