2 oz chevre (goat cheese)
1 cup lightly packed basil leaves
4 cloves of garlic
1/2 oz parmesan cheese, grated
1/2 oz romano cheese, grated
2 tbsp olive oil
1 box Barilla thin spaghetti or penne

1. Cook pasta according to package directions. While pasta is cooking in boiliig water, thread garlic cloves (unpealed is fine) onto a skewer and immerse in pasta water for 45-60 seconds. (this takes the "bite" out of the raw garlic). Remove garlic from water and peel. Reserve peeled garlic for sauce. When pasta is done, reserve 1/4 cup of the pasta water.2. In a blender or food processor, combine chevre, basil leaves, reserved, peeled garlic cloves, cheeses and olive oil. Process at medium speed, scraping down sides as necessary, until well blended. Add pasta water to make a smooth consistency for mixing with pasta.3.
