4 chicken breasts, cut lengthwise and pounded thin into cutlets
4 tbs crushed, dried oregano
2 tbs black pepper
1 tbs salt
3 tbs extra virgin olive oil
3/4 cup dry white wine
1 cup chopped onion
Juice from one lemon
3 cloves garlic minced
1 can (14 oz.) chicken broth (preferable fat free-low sodium)

Here is how you make Slow cooker lemon chicken:

Coat cutlets with salt, pepper and oregano. Heat olive oil in pan on medium heat. Brown chicken on both sides (about 8 min. on each side). Place chicken in slow cooker. Deglaze pan with 1/4 cup white wine, scrapping pan. Add onion and garlic, stir until onions are translucent. Add the 1/2 cup more of wine and bring to simmer. Add chicken broth, bring back to simmer. Add lemon and stir for 1 minute. Pour mixture over chicken. Place slow cooker on low setting. Allow to cook for 3 - 4 hours (my cooker will cook chicken through in 3 hours).
