Here is how you make Thai Coconut Slow Cooker Chicken:

Grease slow cooker with Pam. Place chicken and carrots on bottom of slow cooker. Place the rest of the ingredients (except water and cornstarch) in food processor and process together until mixture is mostly smooth Pour sauce over chicken and carrots. Mix well, then cover and cook on low for about 6 hours. An hour before serving, mix cornstarch and water in a small bowl until cornstarch is dissolved. Pour mixture into slow cooker.
