Here is how you make my chicken soup:

this makes use of leftover chicken from a roast dinner....throw any remainign meant and the carcas in a large pan fill with water...bring to the boil and simmer for several hours...once cooked remove all chicken and bones...strip all meat and put to one side.the stock can either be chilled to separate any remaining fat or used as is. Next prepare all vegetables..finely chopping all but the potatoes which can be more chunky.place all vegetables into stock pan and allow to cook stirring continually untill enough moisture is created to simmer the rest of the veg in...carry on cooking this way by placing lid on pan and allowing veg to steam in their own moisture till they are tender..add either chilled and skimmed or hot stock...return pan to boil and place lid back on...once lidded turn heat down to a gentle simmer and allow to cook for several more hours...a healthy and very warming meal for all the familyNumber of Servings: 6Recipe submitted by SparkPeople user SONGOFSERENITY.
