Summer Squash, 1.5 cup, sliced
Red Onion, .5 cup, chopped
Spinach, fresh, 100 grams
Butter, 1 TBL
Olive Oil, 1 TBL
Garlic, 1 clove minced
Salt, .5 tsp
Lemon Pepper to taste
Sun-Dried Tomatoes, 20 grams chopped
Mozzarella or Feta Cheese, 2 ounces shredded or crumbled


How Do I Make Chicken and Squash Medley?

Here is how you make Chicken and Squash Medley:

Preheat oven to 375 degrees. Grease an 8x8 inch baking dish. Season chicken strips with salt and lemon pepper and place in baking dish. Cover dish with foil and bake for 30 minutes or until chicken is fully cooked.Heat oil & butter in a large skillet. Saute squash, onion and garlic for approximately 10 minutes.Add chopped spinach leaves & toss until spinach wilts. Remove from heat and toss with a little salt, pepper & any other spice you desire.Remove chicken from the oven, uncover, and sprinkle with the sun-dried tomatoes. Spoon squash mixture over chicken & top with cheese.Set oven to broil & return casserole to oven.
