1 can of Rotel diced tomato & green chiles
4 tyson boneless skinless chicken breast or strips (4 oz each)
1 eggplant unpeeled
1 yellow squash
1/2 white onion
1/2 cut of low sodium chicken broth (1/2 can)


How Do I Make Chicken and Veggy Stir Fry?

Here is how you make Chicken and Veggy Stir Fry:

cut Chicken into cubes. Slices veggies into cubes or slices. Cook all veggys in 1/4 cup chicken broth until desired texture. remove veggies from the pan and set aside. Cook the chicken in the remaing 1/4 of chicken broth. Once chicken is cooked through place all veggies back into the pan and add the Rotel diced tomatos & green chilles. I used a full can which did not come out to be a full cup. Simmer for about 2 mins. Remove from heat and eat as is or service with brown rice. (I served mine with the birds eye steamed rice.
