2 boneless-skinless chicken breast, cut in bite sized pieces.
2 tbs extra virgin olive oil.
1 red bell pepper, seeded & chopped.
3 cloves of garlic, smashed & chopped.
2 cups of chopped white button mushrooms.
2 cups fresh broccoli. (I cooked mine in my steamer when I cooked the rice)
1 cup chicken broth. (I used Better Than Bullion, Organic, reduced sodium)
1/4 cup soy sauce. (You can use lite or low sodium if you prefer)
2 tbs flour or corn starch. (I didn't have corn starch, so I used flour)

How Do I Make Garlic Stir Fried Chicken?

Here is how you make Garlic Stir Fried Chicken:

I start by adding my rice to my rice cooker. I also add my broccoli into the steam tray inside my rice cooker. I turn it on & proceed with the following.On medium heat, heat 2 tbs olive oil in large frying pan or wok. Add diced garlic, cook until slightly golden. Add diced chicken, cook through until no longer pink. (If you aren't steaming your broccoli ahead of time, add it now) Add chopped bell pepper & mushroom. Cook until mostly tender.Stir in 1/2 cup of chicken broth & the 1/4 cup soy sauce. Mix 2 tbs flour or corn starch with the remaining 1/2 cup of chicken broth until smooth. Add to the frying pan or wok. Stir & bring to boil. (If you did steam your broccoli, it should be done now... add & stir into the chicken mixture.)Serve over rice & enjoy!Serving Size:?Makes about 4 heaping 1 cup servings.
