2 Red Bell peppers, cut in half with seeds removed
1 Tblsp Olive Oil
1 Tblsp Honey
1 Tblsp Balsamic Vinegar


How Do I Make Sweet Pepper Chicken?

Here is how you make Sweet Pepper Chicken:

Heat oven to 450.Place chicken breast halves in oven safe dish lightly coated with olive oil or cooking spray. cover each with a red pepper half.Mix together olive oil, Honey and Balsamic vinegar in a small bowl. (Hint: if you measure out the Tblsp of olive oil first, the honey won't stick to the measuring spoon)Pour mixture over chicken and peppers.Bake in the oven for about 40 minutes or until juices run clear.Note: juice in bottom of pan (which is part of the nutritional info) is great over plain pasta, rice or couscous.Makes 4 servings (serving, 1 chicken breast and 1 half pepper)Number of Servings: 4Recipe submitted by SparkPeople user HUGMONKEYMOM.
