2 c sliced mushrooms
1 c sliced bell peppers
1 c frozen brocolli
1 med onion sliced
1 c chicken broth
2 oz mozerella cheese grated
2 oz parmesan cheese grated
3 TBSP olive oil

Here is how you make Chicken and Veggie Penne:

cook pasta according to directions and set aside. in 1 TBSP of oil saute onion, brocolli and peppers until crisp tender and remove from pan - add 1 TBSP of oil and saute shrooms til brown and remove - add last tbsp of oil (if needed) and add chicken (cut into bite sized pieces). Cook until no longer pink and slightly browned. Add veggies and cooked pasta into pan and heat completely. add broth and bring to boil, reduce heat and simmer about 5 minutes.
