Here is how you make Chicken and Lots of Veggies:

Place chicken breasts one at a time in a gallon size bag and pound until flat. This reduces cooking time. Place chicken in large hot skillet and cover. Turn once after 5 minutes. Add onion and pepper when you turn the breasts, replace cover for 5 minutes more. Add zucchini, mushrooms, and tomatoes. Cover reduce heat and simmer until zucchini is done.
