Add 1/4 cup olive oil heat in a pan and brown the cubed meat and set aside on a plateCombine 1/4 cup olive oil cumin, garlic powder, cayenne pepper, diced chilis, chipotle pepper in a food processor for 30 seconds. Return your large pot and brown the ground beef add the paste from the food processor and onions. Add the beef stock and bring to a simmer and cook until stock is reduced slightly. Add in both cans of tomatoes, chopped peppers and browned cubed meat. Stir and mix well simmer for 1 1/2 to 2 hours.
