This Hearty Chili is my spin on my Dad's amazing chili I grew up eating. Preparation can be extremely simple & healthy or low sodium with store bought ingredients. It is economically friendly and yields enough for a large group of people, sharing with neighbors, and freezing. It is zesty due to its variety of beans, added vegetables, and versatility. Try it with with lean ground round (93-7%), lean turkey, or no meat at all. The best part is there is minimal risk of this recipe turning into a disaster!

The ingredients for NZ's Healthy Chili are:

Large Stock Pot & Cover
1.25 - 1.5 lb. Meat (lean ground beef or turkey)
1 can Black Beans
1 can Mild Chili Beans (2 cans if omitting meat)
1 can Pink Beans (or any beans of your choice)
2 28oz. cans of Diced/Crushed tomatoes (1 no-salt added) of any variety depending on your spin (1 15 oz. can Rotel gives a nice kick)
1/2 to 1 cup Chopped Sweet Onion (can be bagged frozen)
1/2 to 1 cup Chopped Celery (can be bagged frozen)
2 Cups Chopped Green, Red, Yellow Bell Pepper (frozen bag from Trader Joe's)
4 to 5 Cups Water
2 Cloves minced/crushed Garlic (can be pre-minced)
4 TBSP Chili Powder
4 TBSP Kirkland Organic No Salt Seasoning (or any addt'l seasoning)
2 tsp Salt - to taste

Additional - Toppings if desired:
* A couple of pinches of 2% Milk Mexican Shredded Cheese Blend
* Pinch of chopped cilantro
* Tortilla Chips
* Broken Table Crackers
* Reduced Fat Sour Cream


How Do I Make NZ's Healthy Chili?

Here is how you make NZ's Healthy Chili:

Makes about 12 Servings.Add meat to stock pot and brown on medium to high heat for 7-10 minutes covered. Chop onion and celery or pull out frozen bags of veggies. Drain excess fat from meat and add crushed garlic, onions, and celery, while adding half of the Chili Powder and No Salt Seasoning. Saute for 5 minutes (do next steps during this time).Open cans of tomatoes, beans, and prepare any other vegetables or pull bags from the freezer. Drain, and rinse beans (reduces sodium) except for Chili Beans. Add all Tomatoes to the Pot and mix for about 5 minutes on medium-high. Then add all beans, peppers (or veg of your choice), additional water. Cook on medium-high for 30 min and simmer on low-medium for the last 30-45 minutes depending on desired thickness (simmer for longer for thicker) stirring occassionally. Add last of the Chili Powder and No-Salt Seasoning about 10-15 minutes prior to serving and add salt to taste if desired.Ladle into bowls and add *Additional Toppings if desired.
