Here is how you make Grilled Cheesy Quesadillas:

Spray skillet with oil of choice and roast mushrooms with a pinch of no salt and pepper until browned. Next, mix yogurt, picante sauce, and cheeses. Spread 2T cheese sauce on corn tortilla. Top with mushrooms (or any other veg/pro) and top with another corn tortilla. Grill in skillet, flipping once. Let stand then cut and top with whatever you like.
