3/4 c. split red lentils
1 bay leaf
4 oz. shredded cheddar cheese
1 medium onion (about 80g) chopped fine
2 oz. mushrooms (about 50g) chopped into small pieces
1/2 c. fresh whole wheat bread crumbs
1 T. chopped fresh parsley
1 T. lemon juice
1 egg
1/8 t. salt
1/4 t. black pepper


How Do I Make Red Lentil Loaf?

Here is how you make Red Lentil Loaf:

Grease a 2-pound loaf pan. If desired, sprinkle with dry bread crumbs (this is not included in the nutrition data).Put lentils, water and bay leaf in a small saucepan over low heat and simmer very gently until lentils are tender and all the liquid has been absorbed (approximately 20 minutes).Remove from heat and discard bay leaf. Preheat oven to 375?F.Add grated cheese to the lentils together with onion, mushrooms, fresh bread crumbs, parsley, lemon juice, egg, salt and pepper. Mix well. Spoon mixture into the loaf pan and smooth out the top.Bake uncovered for 45-60 minutes until firm and golden brown on top.
