I was looking for a good, quick lentil recipe to use as a side dish and came up with this one. I typically don't measure my ingredients so I estimated the measurements. I used what veggies I had on hand, but feel free to vary based on your tastes. I will also try adding some fresh herbs next time to pump up the flavor. Cover and simmer for approximately 20 minutes.While lentils are cooking, dice veggies. Heat a large skillet over medium high heat. Add olive oil.
