The ingredients for Blackeye Pea Loaf are:

1 TBSP Extra Virgin Olive Oil
2 cups cooked blackeyed peas (cowpeas)
1/2 cup finely chopped onion
1/4 cup finely chopped red bell pepper
1 tsp Curry Powder
2 cups vegetable broth
1/3 cup rolled oats
1/2 cup yellow corn meal
1/2 tsp salt
1/4 tsp black pepper

Preheat oven to 350
Grease a 9 inch loaf pan

Using 1 TBSP olive oil in non stick pan brown onion and red pepper until onion is golden, about 5 minutes, add the curry powder and cook stirring about a minute longer Add the remaining ingredients, stir to mix well and cook until it's the consistency of a mush (most of the liquid will be absorbed). Pour into the greased pan, smooth and pat into the pan. Bake for 45 minutes.

Cool completely, chill thoroughly in refrigerator. Cut into slices. Eat cold or fry in small amount of oil to serve hot . Serves 6.
