Cut the Eggplant in 1/2 inch circles and grill on a teflon griller.
Saute the onions carrots and mushrooms in oil until onions are soft. Add the can tomatoes and can lentils. Add 2 tsp of cinnamon, 1tbsp oregano and the vinegar. Cook on top of stove while making the white sauce.

Assemble the 3 parts. pLace the vegetable sauce on bottom ot a cassorole, layer with the eggplnt and pour the white sauce on top. Cook in 400 oven 30 -45 minutes. Let sit in ove about 20 minutes before serving.
