Cut the tomatoes in half and place cut side up on a baking pan. Put the garlic cloves in their paper on the pan as well. Drizzle with olive oil and add salt and pepper. Roast at 225* for 2-3 hours or until done, they should look like sun dried tomatoes.Heat the olive oil in a large skillet on low heat. Remove the garlic from their skins and mash with salt, pepper, and herbs if desired, and add to oil.Put the water on to boil and cook pasta to al dente.Add the pasta to the pan and toss to coat.
