16 oz pkg bowtie pasta
2 T. olive oil
2 c. chopped zucchini
2 T. minced onion
2 cloves garlic, crushed
16 oz can diced tomatoes (I like to use the Italian ones)
1 T. dried basil
1 T. dried oregano


How Do I Make Weeknight Pasta?

Here is how you make Weeknight Pasta:

Prepare pasta according to package directions. Meanwhile, heat olive oil in skillet over medium heat. Add onion, garlic & zucchini. Saute until tender. Add tomatoes with juices and the herbs. Allow to cook a few minutes longer to combine flavors and to reach desired consistency. Stir in prepared pasta. Salt & pepper if desired.This is my basic stand-by pasta for busy nights. I often add other ingredients on hand such as black beans or other in-season vegetables, or left-over chicken, although the basic recipe is delicious as is.
