Drizzle with olive oil, cover loosely with a flour sack, and allow to rise until double in bulk (about 40 minutes using quick-rise yeast).Press small portions of the dough into very thin, pizza-sized circles. Place onto a well oiled cookie sheet. Allow to rise 20-30 minutes, then bake in an oven heated to 400 degrees just until cooked (but not browned), about 5-6 minutes.
