1/2 cup raw wheat germ
1 1/2 tsp (or 1/4 ounce) active dry yeast
1/4 tsp salt
1 cup warm water (for proofing yeast)
1 tbsp olive oil

Toppings:
1/2 lb. Laura's Extra Lean Ground Beef
1 onion, chopped
1 tbs olive oil
1/4 cup water
1 tbs cumin
1 tbs chili powder
1 tsp chipotle powder or cayenne pepper (more or less if you like things hotter or cooler)
2 tsp garlic powder
2 cups Salsa
4 cups shredded Romaine lettuce
2 cups shredded Monterey Cheese
6 tbs fresh cilantro, chopped



How Do I Make Spicy Mexican Pizza?

Here is how you make Spicy Mexican Pizza:

To prepare dough:1. Mix the sugar into the warm water. Sprinkle the yeast on top. Wait for 10 minutes or until it begins to foam. Set aside.2. Whisk together the flour, salt, and olive oil. Make a well in the center of the dry ingredients. Add the yeast mixture to the well. Combine.3. Turn onto a floured surface and knead for 10-12 minutes or until you have a moderately stiff dough that is smooth and elastic. If the dough feels too soft and sticky, work a little more flour into the dough while you are kneading it.4. Loosely cover the dough with a clean kitchen towel and let rise for 30 minutes. (if your kitchen or house is very cool, you may want to put the dough in a lightly greased bowl in your oven with just the light on to help it rise).5. Line two 12-inch pizza pans (or two baking sheets for rectangular pizzas) with parchment paper. If you like, you can sprinkle some extra wheat germ (or cornmeal) on the parchment for added texture on the bottom of the crust.6. Divide the dough in half. Using your fingers, stretch the dough while rotating it to get a rough circular shape (or rectangle if using baking sheets). Place onto parchment paper and use your hands to flatten and stretch it to fill most of the pan.7. If desired, you can pre-bake the crust at 425 F for 10 minutes. This works well if you like a crisper crust. Set crusts aside.For the topping:8. In a large frying pan, heat 1 tbs olive oil over medium-high heat. Add onions and saute for 3 minutes. Add ground beef and dried spices, stirring and cooking until the beef is completely done. Set aside.9. Spread 1 cup of salsa on each pizza crust. Divide beef in half and spread on each crust. Top each crust with 1 cup Monterey Cheese. 10. Bake crust in oven at 425 for 10 minutes or until the cheese is melted and the crust looks golden. Remove from oven and let cool for 5 minutes. 11. Divide cilantro and Romaine lettuce among both crusts.
