Here is how you make Pork Mousaka:

1) Roughly Chop all Vegetables and season. Place on baking tray and oven cook for 10 minutes. (No oil required)2) Fry off mince in pan. (No oil required)3) Add canned tomatoes to the mince and simmer. Season.4) Remove aubergine from the baked vegetables and set aside. Pour the remaining vegetables into the mince and mix thoroughly. 5) Pour the mince/veg mixture into a deep baking dish. Layer the aubergine on top.
