1 (4-pound) center-cut pork loin
2-3 cloves garlic, sliced
6 tablespoons honey
.25 cup Madeira
1 cup stock
salt and pepper (to taste)
Boiled potatos (make sure they are uniform and small to medium)


How Do I Make Roast Pork with Garlic?

Here is how you make Roast Pork with Garlic:

Preheat oven to 450-degrees. Rinse pork, pat dry and set in roasting pan. Pierce roast with a sharp knife and put slices of garlic into slits. Roast in oven for 30 minuets. Reduce temperature to 350. Coat with honey, cook another 30 minutes. Reduce temp to 325. Coat with honey and cook at this temp for about 30 minutes. Remove roast and add the Madeira and stock, mix around a little to get the caramelized honey off of the pan. Add the potatoes and turn to coat all surfaces of the potatoes. Return to the oven and finish cooking, about 30 more minutes. When meat is done, put on platter with potatoes. Skim fat from pan liquid, season with salt and pepper (optional) and serve sauce with meat. This recipe makes about 15-2 oz servings with 4-lbs of meat. you can certainly adjust to how many servings you want. **Note that the caloric value does not include the potatoes!!!Also, the sauce is thin (but delicious!) and if you want it thicker, reduce in a small saucepan. You can even finish the sauce with a tablespoon of butter to make it rich and velvety.
