4- Center-cut Pork Loin Chops, all fat trimmed
2 tbsp. extra virgin olive oil
4- tbsp. fresh ginger root, minced
4- cloves fresh garlic, minced
4- tbsp. Smucker's Sugar Free Peach Preserves/Jam
6oz. white wine (Pinot Gricio)
1 tsp. each salt, ground black pepper

Here is how you make Peachy, Gingered Pork Loin Chops:

Preheat oven to 350 degrees. Trim all the fat off of the pork chops and lay out side-by-side on a cutting board; salt and pepper both sides of each chop. (Omit salt if restricted). Heat a large, oven-proof skillet over med-low heat; add extra virgin olive oil. To the oil add the garlic and ginger root - cook until soft, about 5 minutes. Turn the heat up to med-high and add each pork chop. Cook 3 minutes then turn over and cook an additional 2 minutes. Make sure all sides of chops are seared - transfer to a dish and cover to keep warm. To the skillet, add the white wine and scrape up all the bits on the bottom of the pan; add the peach preserves and stir to mix well; cook on med-high approx. 1-2 minutes; add the chops to the sauce, turning each chop over to ensure it is coated with sauce.
