OPTIONAL: Saute onions until brown. (Or you may just add them raw to the roast.)To make the pork roast, heat olive oil in a large pot over high heat. Salt and pepper pork roast, then sear on all sides to give it some color. Place pork in slow cooker.Add apple juice, apple slices, onions, and bay leaf. Cover and cook on low for 6-8 hours. Remove pork and apples to a heatproof container and keep warm in a 275 degree oven. Place remaining liquid in a skillet and reduce by 1/2 to create sauce.
