Sautee onions and mushrooms in skillet with cooking spray for about 5 minutes.Remove pan from heat, stir in rice, 1/4 cup broth, cheeses, and thyme.Cut deep pockets in each pork chop, spoon 1/2 cup rice mixture into each pocket. Put same skillet back on burner, spray with cooking spray, brown chops one each side for about 2 minutes per side. Add remaining broth. Reduce heat to medium, cover and cook for 10 minutes.
