1 diced bell pepper (I like the yellow...)
1/4 sliced red onion
2 cloves garlic, minced
1 small bunch spinach, chiffonade
3-5 leaves of fresh basil, chiffonade
8 button mushrooms, sliced
2 cans fire roasted tomatoes, diced
1 small can low sodium tomato paste
1-1 1/2 cups water
salt, pepper, oregano to taste.
1 tbsp light olive oil


How Do I Make Jesse's Quick Primavera?

Here is how you make Jesse's Quick Primavera:

Add olive oil to a sauce pan on medium high heat and saute the onion, garlic and bell pepper until the onion begins to soften. Add in mushrooms and cook another 5 minutes.FInally add in the basil and spinach and continue to saute for another minute. Salt and pepper veggies with a dash of each and then stir in both cans of tomatoes along with their reserve liquid.Allow liquid to reduce and begin spooning in paste. Stir until paste is combined in and reduce heat to low to simmer.Allow sauce to simmer for 10 minutes, stirring occasionally and then begin to add in the water, a quarter cup at a time. At the cup mark, allow sauce to simmer further and reduce. If sauce becomes too thick, add more water. If it is too thin, turn up heat slightly and allow it to reduce some. Taste near the 20 minute mark and then re-season with salt, pepper and oregano to taste. You may throw in additional basil at this point, as well. Sauce can be served at this stage or may simmer longer for another 10 minutes, if a thicker consistency is desired.
