Here is how you make barely fried rice:

First, boil rice a few hours to the night before. Thinly slice chicken breast. Julianne carrots, chop onions and carrots, crack & whisk eggs. Cook chicken in 1 tbsn oil with onions & garlic. When cooked dry, remove from pan. Wash pan. Scramble eggs and remove, (I put them in the same bowl with the cooked chicken.) Put other tbsn oil in the pot & heat.
