Here is how you make Curried Rice Salad:

Cook the rice and let cool. Mix the dressing ingredients: mayo, chutney, lime juice, curry powder; set aside. When rice is cool, mix in chicken, scallions, raisins, and enough dressing to coat. Stir well. Season to taste with salt and pepper. Mix in toasted almonds and stir well. Cover and refrigerate until cold. Add more dressing if need to moisten before serving.
