Put olive oil into a glass bowl and set aside. On a cutting board, place the garlic, basil and parsley in a mound, mince the ingredients together with a knife and add to the olive oil. (I'm not that picky about how fine this is.)Core and cut the tomatoes in half an squeeze out the seedsinto a strainer to save the juice. Dice the tomatoes and add them with the salt and pepper as well as the juice to the olive oil. Mix well with spoon, cover and refrigerate and save for a day or 2. To use same day marinate at room temperature for several hours. To serve divede cooked spaghetti to serving size add little butter to serving, if desired, Add 1/3 cup tomato mixture on top of pasta.
