1 lb bag Frozen Mixed Vegetables + 1/2 cup frozen corn and 1/2 cup frozen peas
2, 8 oz cans tomato sauce
1 15 oz can Rotel Tomatoes
1 15 oz can Tomatoes
1 can Beef broth
10 oz red wine
1/2 green pepper, chopped
1/2 cup frozen peas
1/2 cup frozen corn
5 Bullion cubes
Approximately 5 cups water (to desired thickness or to 20 cups)

Here is how you make Easy and Lite Vegetable Beef Soup:

Trim stew meat and cut into small pieces, brown in stock pot with some non-stick spray (you can also use extra lean ground beef in lieu of stew meat). Add onion and celery and continue to saute until softened. Add other ingredients and simmer for 30 minutes or longer. Makes about 10, 2 cup servings. Note: For potato -- used 1 can diced or equivalent of diced par boiled potato. For tomato sauce use 2 plain 8 oz. cans tomato sauce. For mixed veggies, use 1 lb bag frozen mixed vegetables of your own choosing -- I like Prince Edward Medley. You can also substitute Italian tomatoes for Mexican/Rotel tomatoes and add some fresh spinach and Italian herbs and replace the potato with some pasta to make a more Minestrone type soup. This is a great basic recipe to experiment with.
