- 1 Medium onion, chopped or sliced (however you like it!)
- 1 bell pepper, chopped or sliced
- 1 cup mushroom, sliced
- 15 cherry tomatoes
- 2 tsp minced garlic
- 1 large can of tomato sauce
- 1 cup water
- 4 tbsp Harissa (spicy pepper paste) - add more or less depending on how spicy you like your food!


How Do I Make Spicy Harissa Couscous?

Here is how you make Spicy Harissa Couscous:

1. Cook couscous as directed by package (generally, a 1-1 ratio of water to couscous. Bring water to boil, remove from heat, add couscous and cover)2. Meanwhile, saute onion, pepper, and mushroom. Once vegetables are mostly cooked, add garlic and tomatoes (if you're adding a protein, do it now and then remove when cooked before moving onto next step)3. Add tomato sauce, water, and harissa. Let the mixture thicken a little. When some, but not all, of the water has evaporated, add the couscous. (After the couscous has soaked up a bit more of the liquid, add back any protein you want!)4. Continuously stir the couscous mixture to avoid any burning or sticking.
