1 T. olive oil
3 cloves garlic, chopped
1 sweet onion, chopped
1 green bell pepper, chopped
1 1/3 cup cooked rice (I used white but brown would be even better)
1 15oz can of black beans (rinsed and drained)
1 15oz can of red kidney beans (rinsed and drained)
3 mushrooms, chopped
1 15oz can of tomato sauce
1 15oz can of diced tomatoes (drained)
1 T. brown sugar
1 T. Worcestershire sauce*
1 tsp cumin
1 tsp chili powder
The juice of 1 lime
salt and pepper to taste


How Do I Make Spicy Sloppy VegJoes?

Here is how you make Spicy Sloppy VegJoes:

Heat olive oil in a pot on stove. Use pot to saute onions and garlic for a couple minutes. Add green pepper and let cook another 5 min or so, till veggies are tender.Add everything else, stir, heat through, and serve! To thicken mixture, let simmer on stove, uncovered. Serve with whole grain buns, stone ground dijon mustard and fresh lettuce, with dill pickles on the side. Yum.The great thing to me about this recipe is you can feel free to change things up based on what you have in your kitchen (ie, different beans, different tomato, etc).
