Heat 8 inch saut? pan over med. heat, add olive oil and reduce hear to med. low (swirl oil around pan to coat.)Add onions, mushrooms and garlic, saut? until tender(about 4-5 minutes). Add Seasoning to taste. Add spinach, no need to cut it up it will cook down. Cover and continue cooking until spinach cooks down, stirring now and then (about 5 minutes). Cook uncovered about another 5 minutes to reduce liquid. And tomato and feta cheese, stir to mix well and serve. About 3/4 cups per serving.
