Mix 1 can of Starkist Chunk light tuna in water with 2 tablespoons of Fat free mayonnaise. Spread on 1 La Tortilla low carb tortilla. Spray pan with Pam cooking spray and place tortilla on pan. Sprinkle 1 oz (or 1/4 cup) of low fat or fat free grated cheddar cheese on top of tuna mixture. Place the other tortilla on top. Grill both sides. Place on plate.
